Ma's Red Beans & Rice

cute mom Mom used to make this a bit. It tasted good and it seemed healthy!

This is an unusual recipe for Red Beans and Rice - there's no sausage. Meat can add a lot of flavor, but this here is flavor enough for me, and I can serve it to my vegetarian friends. Avoid butter, and you can make this a vegan recipe without much trouble.

red beans and rice Guaranteed MmmMmm Good! Hard to screw up! Make more than you need, cuz it lasts and reheats well, and tastes better than it tastes right off the stove!


1.5 cups brown rice
3 cups water
1 tbl vegatable oil
.5 teaspoon salt
Bring all to a boil and then let simmer for around 45 minutes, covered.

2 tbl olive oil
2 large onions (I like white) diced real fine like
1 tbl chili powder
2 15oz. cans red kidney beans rinsed and drained
1 cup of salsa
.25 cup water
Heat the olive oil, sautee the onions for about ten minutes, add your chili powder, add the beans, the salsa and the water, and then let simmer for five minutes and you are ready.

Goes with anything, and it is a complex carbohydrate! I love this stuff!
